Lunar Pub Co partners with Anthony Demetre

Lunar Pub Company has partnered with revered chef Anthony Demetre.

A multiple pub operator in London has partnered with revered chef Anthony Demetre (above left) to transform its Belgravia venue.

The Lunar Pub Company, led by Hubert Beatson-Hird (above right), has brought in Demetre as culinary director for the reimagination of Ganymede, which will now operate as The Elizabeth

Having founded Arbutus in Soho in 2006, Demetre is credited with bringing seasonal, all day dining ‘bistronomy’ to London’s food scene. In 2007, he established Wild Honey in Mayfair, before launching Wild Honey St James in 2019, where he earned and retained a Michelin star every year from 2022 through 2025. 

"After three wonderful years of Ganymede, we wanted to reimagine our beloved Belgravia site to reflect the fast-changing hospitality environment," says Beatson-Hird. "When the opportunity to work with Anthony emerged, the choice became a no-brainer to work together to create a modern take on British hospitality and gastronomy."

What Demetre brings to the table

On the menu from Demetre and chef David Halewood are British bistro classics and Sunday roasts. Starters include Whipped cod’s roe, duck, pork and guinea fowl terrine; Crisp pig’s head; Vesuvio tomatoes; and Fish cake with bouillabaisse sauce.

Mains feature a Crisp slow cooked duck ‘confit’, spinach, chickpeas and wild oregano; Roast young chicken lacquered with lemon and honey; and Cornish sea bream, warm tomato and basil vinaigrette ‘Antiboise’. 

Beatson-Hird told Pub & Bar that while the Michelin star chef is known for impeccable quality, he is also very value-driven. As such, The Elizabeth will offer a £29 lunch menu when it opens on 16 September. 

Housed in a Grade II Victorian townhouse, The Elizabeth will have 52 covers over three interlinked spaces and a 12 cover terrace.
