Harwood Arms promotes Cutress to head chef

Joshua Cutress has been appointed head chef at London’s only Michelin-starred pub.

Joshua Cutress has been appointed head chef at London’s only Michelin-starred pub, The Harwood Arms in Fulham. 

The renowned south west London pub is co-owned by Brett Graham, Mike Robinson and Edwin Vaux.

Cutress (pictured) joined The Harwood Arms as sous chef when he was 26. Before that, he held roles at Marlon Abela's The Square in 2016, before moving to Graham's The Ledbury in late 2017.

He stayed there for four years before taking on his sous chef position at The Harwood Arms alongside Jake Leach. Formerly head chef, Leach has now moved to a development role within Graham’s organisation, involved across the restaurants and its farms.

Cutress says he is excited to continue Harwood’s repertoire, focusing on seasonal British ingredients and sustainability. He says his kitchen will stay true to The Harwood Arms commitment to celebrating game, but will extend the use of the whole animal in a transition to his own dishes. 

Sustainable farming and using different cuts of meat will add new rotational variety to the pub's Sunday lunches.
