Compton Arms to welcome Rake residency

The Compton Arms has announced that pop-up operator Rake will take over its kitchen.

The team behind Islington's The Compton Arms have announced that pop-up operator Rake will take over its kitchen for a long-term residency from 9 January.

Following a short incubation period at The Compton’s sister pub, The Gun in Hackney, Rake will move to the much-coveted kitchen in 2025. 

The Compton Arms, run by Nick Stephens, is known for nurturing some of London’s most promising chef talent. Past residencies include Four Legs, run by Ed McIlroy and Jamie Allan, who went on to open The Plimsoll and Tollingtons. Most recently, The Compton Arms has served food from rustic Italian kitchen Tiella, which is closing in December.

Rake is operated by Jay Claus, Syrus Pickhaver and Peter Ward (pictured), who bring experience from establishments such as Quo Vadis, Brat and Acme Fire Cult.  

Rake focuses on whole beast butchery and sustainable Cornish fish. The regularly changing menu has featured beer battered cockles and clams; oysters baked rarebit style; and Cumberland spiced lardo.

There's also a beef and ale pie, where braised squid replaces the meat and is topped with whipped potato. Steamed crab claw comes with a laverbread and bacon Béarnaise for dipping. 

The Compton Arms location in Highbury attracts Arsenal fans on match days, so on game days throughout the year, Rake will offer its take on a hotdog - Cumberland sausage in a potato roll with a French dip gravy and English mustard.
